Broccoli with Olives and Feta

Serves: 8

Ingredients

1kg broccoli
½ x 200g pack Cypressa Greek Feta,
200g tub Waitrose Spanish Couchillo Olives
Freshly ground black pepper, to season

Method

  1. Place 1kg broccoli, trimmed and cut into florets, in the top of a steamer or in a metal colander over a pan of gently simmering water. Cover and steam for 6-7 minutes until tender, but still retaining a bite.
  2. In a bowl, toss with ½ x 200g pack Cypressa Greek Feta, crumbled, and ½ x 200g tub Waitrose Spanish Couchillo Olives, roughly chopped, adding half the marinating oil from the olive tub.
  3. Season with freshly ground black pepper before serving.
