Chorizo, Bean, Pepper and Butternut Squash Chilli

This is a hearty one-pot dish, where the gutsy flavour of chorizo really complements the beans and squash. Serve in bowls with a chunk of crusty bread for a warming dish that's guaranteed to keep out the cold.

Preparation time : 15 minutes
Cooking time : 1 hour 15 minutes
Total time : 1 hour 30 minutes

Serves: 4

Ingredients

2 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, finely chopped
225g Spanish chorizo (from the deli counter), peeled and diced
1 large red chilli, chopped
2 x 400g cans chopped tomatoes
1 tbsp dark brown muscovado sugar
1 red pepper, deseeded and chopped
1 butternut squash or pumpkin, about 500g peeled weight, deseeded and cut into 3-4cm dice
410g can cannellini beans, drained and rinsed
20g pack fresh flat-leaf parsley, roughly chopped

Method

  1. Heat the oil in a large saucepan and cook the onion and garlic for 5 minutes, or until softened. Add the chorizo and red chilli, and cook for a further minute until the chorizo releases its red juices.
  2. Add the tomatoes, sugar, pepper and 150ml cold water. Cover and simmer gently for 10 minutes.
  3. Stir in the squash, cover and simmer for a further 45 minutes, stirring occasionally, until the squash is tender. Finally, add the cannellini beans, simmer for 5 minutes and stir in the parsley. Serve immediately.

Drinks recommendation

The spicy flavours of the chorizo would be complemented by a soft red.

I'd recommend adding the cannelilli beans about 15-20 minutes before you are done cooking as I found them to be too hard

I added tabasco sauce to make it spicier which worked out well, a bit of Tex Mex twist

Does anyone have suggestions for healthier substitutes for the following ingredients?

- cannellini beans - chorizo - bacon I suppose but it's still very unhealthy - muscovado sugar - I suppose I can buy it, what else is it good for?

Yummy, my husband loves anything with chorizo in it and this is now his favourite.

Easy to make and very tasty. The sugar with the tinned tomato and the long cooking made this a delicious comforting dish -- complete in the bowl. Jsut the right amount of spice. Will definitely make this again.

A really easy and different vegetarian dish to make. Followed Jo Wheeler's advice about leaving out the chorizo and adding paprika instead for the vegetarian option as I had vegetarian friends to lunch and it was great. Will definitely make this again.

This is absolutely delicious and easy to make. As a mummy with a little girl I was able to prepare the ingredients while she slept in the afternoon and then put it all together in the evening for our family meal. There was plenty left over for lunch the following day and it was still as yummy!!!

A superb dish. I make it regularly now because it's so delicious and ununusual. I tried leaving out the chorizo out and adding paprika for veggie friends, and it was still great.
