Cod and Asparagus Parcels

Serves: 2

Ingredients

350g pack asparagus
250g–275g Select Farm Cod Fillet
25g chopped butter
Pinch of chilli flakes
1 lemon, finely grated zest and juiced
Freshly ground black pepper

Method

  1. Preheat the oven to 200°C, gas mark 6. Snap the woody ends from a 350g pack asparagus. Take 2 x 30cm squares of foil, then divide the asparagus into 2 equal bunches and place each bunch on a square of foil.
  2. Meanwhile, cut a 250g–275g Select Farm Cod Fillet, from the fish service counter, into cubes about 2-3cm, and place half onto each bundle of asparagus. Divide 25g chopped butter, pinch of chilli flakes and finely grated zest and juice of 1 lemon between the parcels and season generously with freshly ground black pepper. Make a parcel by folding the edges together and sealing them tightly. Place onto a baking tray and bake for 15-20 minutes, until the asparagus is just tender and the cod is opaque. Serve immediately with crusty bread.
