Fresh Lime Soda

This refreshing drink is typical of Calcutta, and is a street drink rather than one you'd have at home. In India, it might be served very sweet or quite salty so adjust the seasoning to taste. In hot weather, the body can lose a lot of salt through perspiration, so a salty-sweet drink can be welcome (plus, the salt brings out the full flavour of the lime). Salt and sugar always complement each other; it's just a matter of finding the right balance

Makes: 1

Ingredients

Juice of 2 limes
3 tsp caster sugar
Pinch of salt
Pinch of freshly ground cumin
Soda water, well chilled
Ice (optional)

Method

  1. Pour the lime juice into a chilled glass, and add the sugar, and then the salt and cumin to taste.
  2. Add ice if you like, top up with chilled soda water and serve straight away, garnished with lime wedges.
