    Glazed Fruit Mince Scrolls

    Glazed Fruit Mince Scrolls

    • Cooking time: 20 minutes

    Makes: 8

    Ingredients

    • 1 tsp vanilla extract
    • 205 g mincemeat
    • 30 g caster sugar
    • 125 g icing sugar
    • 100 g cream cheese, softened
    • 50 ml milk
    • 150g unsalted butter, 60g diced, 60g softened, 30g melted
    • 300 g plain flour
    • ¼ tsp salt
    • 1 egg, lightly beaten
    • 2 tbsp brown sugar
    • 7 g dried yeast

    Method

    1. For the dough, dissolve the yeast in 2 tbsp tepid water;. Place the milk and diced butter in a pan; heat gently to melt the butter. Sift the flour and salt into a bowl; stir in the caster sugar. Add the egg, milk mix and yeast; stir again.
    2. On a floured surface, knead the dough for 8 minutes; add extra flour if it’s too sticky. Turn it into a lightly greased bowl; cover and keep in a warm place to rise for 30 minutes.
    3. Punch down the dough; turn it onto a floured surface. Knead briefly; roll it out to 20cm x 30cm. Brush with most of the melted butter and sprinkle with the brown sugar; spread on the mincemeat and roll to make a log. Slice into eight; place on a greased baking tray, cut sides up. Brush with the remaining melted butter; cover and set aside to rise for 20 minutes.
    4. Preheat the oven to 180c/gas 4. Bake the rolls for 20 minutes, then set aside on a wire rack.
    5. Beat together the soft butter, cream cheese, icing sugar and vanilla. Drizzle the glaze onto the buns; leave to set.

    Cook's tips

    If you don't have time to make the glaze, brushing the cooked scrolls with a mild clear honey is easy and just as delicious.
