Griddled Lamb and Halloumi Kebabs

Ingredients

Diced lamb leg
Halloumi cheese
Waitrose Marinated and Grilled Aubergines
Waitrose Marinated and Grilled Red and Yellow Peppers
Herby couscous salad
Lemon wedges

Method

  1. Thread diced lamb leg and halloumi cheese onto pre-soaked wooden kebab skewers, along with Waitrose Marinated and Grilled Aubergines and Waitrose Marinated and Grilled Red and Yellow Peppers.
  2. Drizzle the remaining oil from the vegetables over the kebabs and cook them on a hot griddle or barbecue until the lamb is thoroughly cooked.

Serving tips

Serve with a herby couscous salad and lemon wedges to squeeze over.

I replaced the aubergine with cherry tomatoes, and the marinated peppers with raw yellow peppers and it was delicious. I think maybe pre-cooked veg are not quite gutsy enough for this recipe.

Disappointingly, mine turned out a little flavourless. Could have been the lamb though.
