Grilled Cod with Coriander and Radish Butter

Finely grated radish gives a fresh, peppery flavour to a simple herb butter - superb spooned over plump, juicy cod fillets.

Preparation time : 10 minutes
Cooking time : 10 minutes
Total time : 20 minutes

Serves: 2

Ingredients

350g fresh Icelandic prime cod fillet, cut into 2 pieces
50g Waitrose Slightly Salted English Butter, softened, plus 1 tbsp extra
½ x 20g pack fresh coriander, chopped
50g radishes, finely grated
1 salad onion, finely chopped

Method

  1. Preheat the grill to hot. Pat the fish dry on kitchen paper and season on both sides. Grease a shallow, heatproof dish with a little butter and lay the fillets next to one another in the dish. Take the tablespoon of butter and dot over the fish. Grill for 10 minutes, or until cooked through and just beginning to colour.
  2. For the flavoured butter, reserve 1 tablespoon of the chopped coriander and mix the remainder with the grated radish, salad onion and the remaining butter.
  3. Transfer the cod to warmed serving plates using a fish slice, spooning over any cooking juices. Top with spoonfuls of the flavoured butter and scatter with the reserved coriander. Serve with new potatoes and broccoli.
