Grilled Mackerel Smørrebrød

Preparation time : 15 minutes

Total time : 30 minutes

Serves: 4

Ingredients

2 tbsp plain flour
Salt
Freshly ground black pepper
¼ tsp mustard powder
500g fresh mackerel fillets
8 small slices rye bread
2 tbsp finely chopped shallot

Tartare sauce
4 tbsp mayonnaise
2 tbsp sour cream
1 large gherkin, finely chopped
6 green olives, pitted and finely chopped
1 tsp white wine vinegar
1 tbsp fresh chopped chives

To serve
Sliced red onion
Pickled red cabbage
Sliced gherkins

To garnish
Chives

Method

  1. Preheat the grill. Make the tartare sauce by mixing all the ingredients. Season to taste.
  2. Put the flour on a plate and season well with salt, pepper and mustard. You may need to remove some pin-bones from the fish using a pair of tweezers. Halve each fillet lengthwise. Coat the mackerel in the seasoned flour. Grill the fish for 4-5 minutes on each side.
  3. Toast the bread lightly, if you like. Spread the bread with 1-2 tbsp tartare sauce then top with the fish and garnish with sliced red onions, pickled red cabbage or gherkins. Garnish with chives. Serve warm.
