Hearty Lettuce Salad

Preparation time : 10 minutes
Cooking time : 5 minutes
Total time : 15 minutes

Serves: 6

Ingredients

7 tbsp olive oil
1 tbsp white wine vinegar
½ tsp sugar
3 Little Gem Lettuce
50g blanched almonds, lighlty toasted
1 clove garlic, crushed
25g pack parsely, chopped
15g pack dill, chopped

Method

  1. Prepare and light the barbecue. Chop the almonds and mix in a bowl with the garlic, parsley, dill, 6 tbsp of the oil, vinegar, sugar and plenty of seasoning.
  2. Cut each lettuce into quarters and brush the cut sides with the remaining oil.
  3. Once the barbecue is hot, lightly cook the lettuce wedges, turning them from one cut side to the other until lightly seared.
  4. Transfer to a serving plate and spoon over the dressing to serve.

Cook's tips

Cooking the lettuce isn’t vital, but it does give an appealing, seared colour and enhances the flavour. It can also be cooked briefly in a lightly oiled frying pan or griddle pan.
