Honey Chicken Pan-Fry with Lemon and Sweet Potato

This sweet and zesty supper dish is ready to eat in just 30 minutes and makes a great family meal.

Preparation time : 10 minutes
Cooking time : 30 minutes
Total time : 40 minutes

Serves: 4

Ingredients

1 tbsp Waitrose Organic Italian Extra Virgin Olive Oil
2 organic lemons
700g organic sweet potatoes, peeled and roughly diced
2 cloves organic garlic, crushed
4 Waitrose Organic Fresh British Free Range Chicken Breast Fillets, cubed
1 tsp dried organic rosemary
1 tbsp Waitrose Organic Australian Eucalyptus Honey

Method

  1. Heat the oil in a large frying pan. Cut 1 of the lemons into thick slices and add to the pan with the sweet potatoes. Cook over a gentle heat for 15 minutes, turning occasionally, until the potatoes are browned and tender.
  2. Add the garlic, chicken and rosemary to the pan, increase the heat and season. Cook for 10 minutes until the chicken is browned and thoroughly cooked, with no pink meat.
  3. Squeeze the remaining lemon over the sweet potatoes and chicken, and stir in the honey. Simmer for 1-2 minutes, then serve immediately with organic broccoli.

After handling raw poultry, wash work surfaces, cutting boards, utensils and hands thoroughly.

I made this again but used a wok rather than a frying pan - this dealt with the soft potato problem. Again I used lemon zest/pulp/juice rather than pith with an excellent tangy result.

I made this again with around 1kg of sweet potato to match the larger chicken breasts I get from my butcher - the chickens are so free range you have to avoid them as you park outside the farm shop. It was difficult to pan-fry this amount of sweet potato in one go, so I put the lid on the pan and sweated it. Unfortunately I overestimated the time required and the potato went a bit soft. However, the end result was still great if a bit mushy. Once again there were adverse comments about the lemon pith even though I think it's a great feature of the dish.

I've made this several times and think it's excellent. Some people do seem to leave the cooked lemon though...

I cant agree with the other comments as i felt this was a lovely recipe. A nice quick recipe for when in a rush. As long as you scale down the amount of lemon for your own tastes. My tip is to make sure what ever happens, that you dont cook the sweet potato too fast :) thanks

I made this a week ago amending the recipe only slightly (using mixed herbs as I didn't have Rosemary and adding broccoli and courgette to the main pan). My girlfriend and I loved it and we're making it again tonight for a guest. With some crusty bread on the side it's TOP banana! Taste as you cook, if it's too lemony add more honey (or use less lemon). I recommend it, don't be afraid to be creative with the recipe and amend as you taste!!!

I completely agree!! Most Waitrose recipes are great but this one was a waste of time and money on good ingredients!! We eneded up throwing most of ours away, the lemon flavour was very overpowering, maybe less lemon would help this recipe?!?!? The combination sounds wonderful but it didn't taste it this time!!

I think that most of the Waitrose recipes are great, however this one is terrible.

The sweet potato takes far longer to cook than the times quoted and should be parboiled first in my opinion. I also found it strange adding raw chicken to partly cooked vegetables.

The end result is an odd combination, not very tasty. Both my wife and I felt that it was a waste of the high quality ingredients I bought from Waitrose. Overall a big disappointment and one to avoid.
