Honeyed Fig, Roquefort and Rocket Salad with Sherry Vinegar Dressing

Both these starters require nothing more than the assembly of top-quality ingredients, but the results are stunning - visually and in terms of flavour. They work well as a combination of flavours, so feel free to plate them up together. Throw them together at the last minute, or make an hour or two ahead of time, adding the finishing touches before serving.

Preparation time : 10 minutes
Total time : 10 minutes

Serves: 6

Ingredients

2 x 50g packs roquette leaves
6 plump ripe figs
250g Roquefort cheese
1 tbsp light clear honey
4 tbsp extra virgin olive oil
1 tbsp sherry vinegar
Salt and freshly ground black pepper

Method

  1. Arrange the roquette leaves over a serving platter. Quarter the figs and arrange them over the rocket. Crumble the cheese and scatter it over the salad. Carefully drizzle the honey over the fig quarters.
  2. In a small bowl, whisk together the olive oil and sherry vinegar. Season to taste. Just before serving, drizzle the sherry vinegar dressing over the salad, add more black pepper and serve immediately with good bread.
