Italian Beefburgers

This speedy recipe is packed with the irresistible summer flavours of basil, olives and melting mozzarella cheese - the taste of Italy in a burger.

Preparation time : 15 minutes, plus 20 minutes chilling
Cooking time : 12 minutes to 16 minutes
Total time : 47 minutes to 51 minutes

Serves: 4

Ingredients

500g pack Waitrose Extra Lean British Ground Beef
1 small onion, finely chopped
1 clove garlic, crushed
4 tbsp Waitrose Basil Pesto Sauce
2 tbsp Waitrose Spanish Sliced Black Olives in brine, drained and chopped
125g pack Galbani Santa Lucia Mozzarella, drained and roughly chopped
Oil, for brushing

Method

  1. Preheat the barbecue or grill. In a large bowl, mix the beef, onion, garlic and pesto with your hands, then knead in the olives, mozzarella and season.
  2. With wet hands, shape into 4 burgers, brush with a little oil and chill for 20 minutes. Cook for 6-8 minutes on each side until thoroughly cooked, the juices run clear and there is no pink meat.
  3. Cut 4 baked Waitrose Ready to Bake Italian Recipe Ciabatta Rolls in half and add some slices of tomato. Top with a burger and some rocket, then drizzle a little Waitrose Sundried Tomato and Balsamic Vinegar Dressing over. Serve with Waitrose Straight Cut Oven Chips.

Cook's tips

These burgers can be frozen. Open-freeze the patties on a tray lined with greaseproof paper until firm, then pack into labelled containers or freezer bags and freeze for up to 1 month. Defrost thoroughly in the fridge before cooking.

I made this recipe when it was published in the Seasons (Summer 2004) magazine and my family loved them. So did I!! Then I stupidly lost the copy of the Seasons magazine and so I have been frantically searching for this recipe ever since!! Now after 4 years of searching (and umpteen site searches!!) I have thankfully found it again. I must have been entering the wrong criteria for the searches. Finally I entered a search in the 'recipes only' section for "summer seasons recipes 2004" and I found it!! I am over the moon at finding it again and my family will be very grateful when they are once again eating these wonderful beefburgers. I did omit using the olives but followed everything else including the wonderful sundried tomato and balsamic vinegar dressing which just put the perfect finishing touch to this recipe. Thanks Waitrose for such a lovely recipe. Now I have ended my 4 year search for this recipe, I will make sure that I never lose any more Seasons magazines!!
