Jersey Royals with Lemon, Capers and Mint

Preparation time : 10 minutes
Cooking time : 20 minutes
Total time : 30 minutes

Serves: 6

Ingredients

2 lemons
7 tbsp avocado or olive oil
1½ tsp caster sugar
4 tbsp Waitrose Cooks' Ingredients Nonpareille Capers in Brine, rinsed
750g Jersey Royal or baby new potatoes
20g pack mint

Method

  1. Halve the potatoes if large and put in a saucepan with a third of the mint sprigs. Add a little salt and cover with cold water. Bring to the boil, reduce the heat and simmer gently until tender, about 15-20 minutes.
  2. Pare the zest from the lemons using a zester or grater. Tear the remaining mint (reserving a few sprigs to garnish), discarding the stalks. Mix the oil in a bowl with the sugar, capers, 2 tbsp of lemon juice and the mint. Season with black pepper.
  3. Thoroughly drain the potatoes, discarding the cooked mint sprigs, and turn into a serving dish. Spoon over the dressing and scatter with the lemon zest and the reserved mint sprigs. Serve warm or cold.
