Lemonade With Saffron And Ginger

Summers in India – and sometimes, if we’re lucky, in this country – demand a variety of cooling drinks kept ready in the fridge. You could leave out the sugar in this recipe if you prefer, or substitute it with honey. A pinch of ground cardamom will add extra spice.

Ingredients

4 Lemons, juice
75g Caster sugar
2 tbsp Fresh root ginger, peeled
1 tsp Saffron

Method

1. Put the lemon juice, sugar and a little salt to taste in a jug. Grate the ginger and crush it in a garlic press to squeeze the juice out into the lemon mixture; discard the squeezed pulp.
2. Add the saffron to the jug and top up with 500ml cold water. Serve in tumblers with salted rims and lots of ice.
