Mariposa's Pina Colada

The perfect piña colada needs to be made with the very ripest pineapple," says Mariposa, who works in Cuba's cigar industry.

Ingredients

1 ripe baby pineapple
60ml coconut milk
A few ice cubes
60ml white rum such as Metusalem

Method

  1. Cut off the top of the pineapple and carefully scoop out the inside, making sure you don't puncture the skin. Purée the pineapple flesh and tip into a sieve so the juice drains through. Press it gently to extract all the juice.
  2. Pour 120ml of the pineapple juice into a cocktail shaker. Add the coconut milk, ice and rum. Shake vigorously until well chilled. Strain into the pineapple and drink through a straw.
