Mediterranean Cod with Pappardelle

Ingredients

250g Select Farm Cod Fillet
350g pot Waitrose Mediterranean Vegetable Pasta Sauce
Waitrose Basil Pappardelle, to serve

Method

  1. Cut a 250g Select Farm Cod Fillet into 2-3cm chunks. Meanwhile, tip a 350g pot Waitrose Mediterranean Vegetable Pasta Sauce into a pan and bring to the boil. Add the cod, stir gently to coat in the sauce, and reduce the heat.
  2. Simmer gently for 5-6 minutes until white, opaque and just cooked. Serve with Waitrose Basil Pappardelle, cooked according to the instructions.

lovely recipe...i added spinch and butter squash which complemented the dish well.
