Melon and Lychees with Ginger

Preparation time : 15 minutes plus several hours chilling
Total time : 7 hours

Serves: 6

Ingredients

1 large, ripe melon, such as cantaloupe or honeydew, skin and seeds removed and cut into small chunks
2 x 425g tins lychees in syrup
225ml marsala
3 tbsp chopped preserved Chinese stem ginger

Method

  1. Put the melon pieces in a bowl, add the lychees, one-third of their syrup, and the marsala. Toss lightly, cover with plastic wrap, and refrigerate for several hours.
  2. Transfer to a large serving bowl and sprinkle the preserved ginger on top and then serve.
