Quick Pork Cassoulet

In this quick version of the French classic, we’ve used garlic-flavoured sausages to give the dish its essential Gallic flavour in a fraction of the cooking time.

Preparation time : 5 minutes
Cooking time : 20 minutes
Total time : 25 minutes

Serves: 4

Ingredients

1 tbsp olive oil
400g pack Waitrose Pork & Fresh Garlic Sausages
1 red onion, sliced
2 rashers streaky bacon, chopped
1 tbsp tomato purée
410g can cannellini beans, drained and rinsed
400g can Waitrose Chopped Tomatoes with Chopped Herbs
½ x 20g pack fresh flat-leaf parsley

Method

  1. Heat the olive oil in a large, deep, non-stick frying pan or flameproof casserole over a high heat. Squeeze the sausages out of their skins, cut each one into 5-6 small nuggets, then roll into small oblong balls with wet hands.
  2. Add the sausage balls to the hot oil. Cook for about 5 minutes, stirring carefully throughout, until golden all over.
  3. Add the onion and bacon and mix in well, scraping up any cooked bits of sausage meat from the base of the pan. Cook for a further 5 minutes, until the onion starts to soften.
  4. Mix in the tomato purée, beans and the tomatoes, adding a dash of water if needed. Mix well and cook for 3-5 minutes until piping hot.
  5. Spoon into shallow bowls and sprinkle with chopped parsley. Serve with plenty of crusty bread and dressed green salad.
