    Roasted chicken with chorizo and cabbage

    Roasted chicken with chorizo and cabbage

    Lovely mix of flavours

    Serves: 4

    Ingredients

    • 1 tbsp olive oil
    • 2 tbsp brandy or sherry
    • 1 pointed spring cabbage, cored and shredded
    • 1.2kg pack essential Waitrose 4 British Chicken Quarters
    • 4 large cloves garlic, unpeeled
    • ½ x 250g pack Unearthed Spanish Mini Cooking Chorizo Sausages, diced

    Method

    1. Heat the oven to 200°C, gas mark 6. Place the chicken quarters in a heavy-based, shallow, ovenproof casserole dish, then add the garlic cloves and diced chorizo. Sprinkle with the olive oil, brandy or sherry and seasoning. Roast for 15 minutes
    2. Remove the chicken from the oven and lift out of the pan. Stir the cabbage into the garlic and chorizo, then place the chicken back on top. Return to the oven for 30–35 minutes until the chicken is golden and cooked through, with no pink meat
    3. Remove the chicken from the pan and keep warm. Slip the garlic cloves out of their skins and mash gently with a fork. Stir into the shredded cabbage and chorizo, check seasoning and serve with the chicken and some mashed potato.
