Serrano Ham Salad with Melon, Peach and Roasted Almonds

This refreshing salad of sweet fruit, salty ham and crunchy almonds is ideal for enjoying as a light lunch, served alfresco.

Preparation time : 10 minutes
Cooking time : 5 minutes
Total time : 15 minutes

Serves: 4

Ingredients

50g whole almonds, skin on, roughly chopped
2 Perfectly Ripe peaches, stones removed
½ galia or cantaloupe melon, deseeded and peeled
½ x 50g bag lamb's lettuce
85g pack Waitrose Serrano Ham
Juice of ½ lemon

Method

  1. Preheat the oven to 200ºC, gas mark 6. Place the chopped almonds on a roasting tray and roast for 5 minutes until light golden brown in colour.
  2. Cut each peach into 8 wedges. Dice the melon into small cubes. Divide the fruit and the lamb's lettuce between 4 plates and top each serving with an equal amount of Serrano ham.
  3. Sprinkle with the almonds and a good grinding of black pepper, then drizzle with a little lemon juice.
  4. Serve immediately.

Cook's tips

Try nectarines instead of peaches in this dish. Other types of dried ham, such as Spanish Paleta Ibérico or Italian Parma ham, can also be used.

This dish is very refresh. I've normally only had parma ham or serrano ham with melons/cataloupes so it was fun to try out the peaches. However, the Perfectly Ripe yellow flesh peaches were a bit sour this season. I normally love the Perfectly Ripe fruits. The yello flesh peaches were a bit overwhelming for the dish, perhaps I will try white flesh peaches next time for a more subtle flavor
