    Tarte Tatin with Red Onions and Thyme

    Tarte Tatin with Red Onions and Thyme

    Easy to prepare, this stunning savoury tarte makes a great starter or vegetarian main course.

    Serves: 6 as a starter (or 4 as a main course)

    Ingredients

    • 1kg red onions, thinly sliced
    • 2 tbsp olive oil
    • 25g butter
    • 1 tsp light brown muscovado sugar
    • Spray bottle Waitrose Cooks' Ingredients Balsamic Vinegar
    • ½ x 15g pack fresh thyme, finely chopped
    • 375g pack Saxby's Fresh Ready Rolled Puff Pastry

    Method

    1. Preheat the oven to 200°C, gas mark 6. Place the onions in a large roasting tin. Add the olive oil, butter and sugar, and season. Spray on 4-5 spritzes of balsamic vinegar and sprinkle with the thyme. Mix well to coat the onions and arrange in an even layer. Roast in the oven for 30-35 minutes, or until the onions begin to caramelise and become sticky at the edges.
    2. Remove the tin from the oven, then increase the temperature to 220°C, gas mark 7. Tip the onions into a well-oiled 24cm round, shallow cake tin or tarte Tatin tin. Unroll the pastry and cut a circle that is slightly larger than the top of the tin. Place the pastry over the onions, tuck in around the sides and prick well with a fork to let the air escape and keep the pastry crisp.
    3. Bake for 15-20 minutes, or until the pastry is crisp and golden brown. Remove from the oven, place a large plate over the tin and invert the tarte onto the plate, shaking well to remove from the tin. Cut into 6 wedges, spritz again with a little balsamic vinegar, then serve with a colourful salad such as our Nantaise Salad.

    To serve as a main course, crumble a soft goat's cheese over the tarte and cut into 4 wedges.

    Drinks recommendation

    Try serving with an aromatic wine from Alsace such as Pinot Gris Le Fromenteau 2003 Josmeyer.
