Tartiflette with Brie and Bacon

This dish is traditionally made with reblochon cheese, but we have combined creamy tangy Brie with smoked bacon and potatoes for an unusual twist.

Preparation time : 15 minutes
Cooking time : 1 hour
Total time : 1 hour 15 minutes

Serves: 6

Ingredients

2 tsp vegetable oil
300g smoked thick-cut rindless bacon back rashers, chopped
1 large onion, thinly sliced
½ x 15g pack fresh thyme
284ml pot Waitrose Whipping Cream
300ml semi-skimmed milk
1 clove garlic, crushed
1kg waxy potatoes, such as Charlotte potatoes, peeled and thinly sliced
250g Waitrose French Mature Ripe Brie, cut into thin slices

Method

  1. Preheat the oven to 180°C, gas mark 4, and lightly grease a 1.5-litre ovenproof dish. Heat the oil in a frying pan and fry the bacon and onion over a medium heat for 4-5 minutes until beginning to brown.
  2. Chop the thyme leaves, reserving a few to garnish. Place the thyme, cream, milk and garlic in a large pan. Bring to a simmer, add the potatoes, then cover and cook for 5 minutes. Stir in the bacon and onions and season with freshly ground black pepper. Place half the potato mixture in the base of the prepared dish, then top with half the sliced cheese. Repeat, finishing with a layer of cheese.
  3. Bake in the oven for 40-45 minutes, until the potatoes are tender when pierced with a knife, and the top is golden. Garnish with the remaining thyme and serve with a lamb’s lettuce salad and chunks of Grand Mange Blanc bread.

Cook's tips

This dish can be assembled, ready to cook, several hours in advance or the day before. Cool, then cover with clingfilm and leave in the fridge until required. Remove the clingfilm and allow 10-15 minutes extra time in the oven if cooking straight from the fridge.

Made this as a supper dish for 2 friends who had to have seconds and therefore skipped dessert! I stupidly used 2 types of brie. The one specified in the recipe melted beautifully into the sauce but the inferior "basic" brie from another supermarket didn't! I've had to pass on the receipe card several times.

Tried this the other day after getting recipe card from Waitrose. The family loved it. Very simple to do and I've already been asked to do it again from my children.

I added some sliced mushrooms and fried the with the bacon and added a large teaspoon of Smoked Paprika and it was the tastiest meal we have had in a very long time, one hour later and we are still drooling over it!

Tried this last night - halved the quantities for two of us and we ate every scrap (but felt a bit too full later!) Easy preparation (cut Brie into small chunks rather than slices - too sticky) and great flavour - am recommending it to family and friends.

This was another great success. Obviously a rich dish, but delicious with rack of lamb and broccoli. Very easy to prepare ahead, which is always a bonus. I have also made it with Reblochon which was equally very good.
