Waldorf Salad 2008
References to food abound in Cole Porter’s faux-ironic hymn to the mysterious You. The pictures he paints are irresistible – who else would dare rhyme Mahatma Gandhi with Napoleon Brandy? And how delighted You’d be to be likened to a turkey dinner and, variously, Ovaltine, a hot tamale, Camembert, and broccoli. Best of all, he says that as well as being a Berlin ballad, You’re a Waldorf salad. In my songbook, you’d be one that’s gently warm with nutmeg and allspice – because you’re beyond price.
Serves: 6 as a side dish
Ingredients
1 celeriac head, peeled and sliced with a peeler
4 apples, cored and sliced - Waitrose Royal Gala Apples - BUY ONE GET ONE FREE
A squeeze Lemon juice
1 celery head without leaves, finely chopped
A pinch allspice
A pinch ground nutmeg
150ml mayonnaise - Hellmann's Extra Light/Light/Real Mayonnaise - SAVE 25%
Pecans, shelled and toasted
Method
- Put the celeriac and apple in a bowl of water acidulated with the lemon juice. When you are ready to eat, drain the celeriac and the apple, then mix all the ingredients together and serve the salad at room temperature.
