Warm Berries in Red Wine on Toasted Brioche

Berry fruits contain antioxidants and fibre, while the red wine also has antioxidants. Crème fraîche may seem indulgent, but it is a good source of calcium.

Preparation time : 5 minutes
Cooking time : 5 minutes
Total time : 10 minutes

Serves: 2

Ingredients

230g pack Shearway frozen Organic Four Fruit Fusion or similar mixture of frozen raspberries, strawberries, blueberries and blackberries
100ml light, fruity red wine, such as Garnacha, Pinot Noir or Gamay
1 stick cinnamon
1 tbsp demerara sugar
½ pack individual brioche
Icing sugar, for dusting
2 sprigs of basil, to decorate
Half-fat Waitrose Crème Fraîche, to serve

Method

  1. Place the frozen fruit, red wine and cinnamon stick in a saucepan over a medium heat. Bring to simmering point, then lower the heat and cook for 5 minutes. Remove from the heat and stir in the sugar. Remove the cinnamon stick.
  2. Slice and toast the brioche. Arrange it on dessert dishes and spoon the poached fruit around. Dust with icing sugar, decorate with the basil and serve with the crème fraîche.

Mmmm....it was a really lovely dessert to serve, looked great on the plate. I bought a large brioche and just cut it into slices which worked well. The creme fraiche on the side was gorgeous. Would make again
