Lemon Seafood Spaghetti

This quick pasta dish is reminiscent of those cooked in the Mediterranean, where seafood is readily available and cooked simply and quickly in harbour-side restaurants

Preparation time : 5 minutes
Cooking time : 15 minutes
Total time : 20 minutes

Serves: 2

Ingredients

200g linguine
3 tbsp olive oil
1 clove garlic, finely sliced
Pinch of crushed chilli, to taste
½ x 400g pack Waitrose Frozen Fruits De Mer
Finely grated zest and juice of 1 lemon
½ x 20g pack fresh mint leaves, chopped
½ x 20g pack flat-leaf parsley, chopped

Method

  1. Bring a large pan of water to the boil and cook the pasta according to the instructions on pack.
  2. Warm the oil in a large frying pan over a medium heat. Add the garlic and the chilli and cook for about 30 seconds until soft but not coloured.
  3. Add the frozen fruits de mer to the pan, taking care as it may spit a little as it comes into contact with the oil. Mix well in the flavoured oil and cook for about 8 minutes or until the prawns turn pink and everything is piping hot. Add the lemon zest and juice to the pan.
  4. Remove from the heat, add the drained pasta and the herbs. Toss everything together to combine thoroughly. Season and serve immediately with a tomato and red onion salad.
