Ensure the surface of the meat is throughly cooked. Cool left overs to room temperature, refrigerate within two hours, consume within two days.
Remove all packaging. Seal all sides of the venison rack in a frying pan before placing venison in a roasting tin in centre of oven. Ensure surface of meat is thoroughly cooked. Stand for 10 minutes before carving.
