Preheat oven. Remove film. Remove tray and place potatoes and goose fat onto a preheated baking tray. Place in centre of oven, turning three times throughout cooking until golden and crisp. Stand for 1 minute before serving. (Time 45 mins Oven: 220�C, Fan: 200�C, Gas: Gas Mark gas 7)
