Place the meat in a roasting tin. Brown the meat first in the oven at 220�C for 10 minutes, then reduce the temperature to above settings. Ensure the surface of the meat is thoroughly cooked. Leave to rest for 10-15 mins before carving. ( Oven: 180�C, Fan: 160�C, Gas: Gas Mark gas 4)
