First created by Henri-Louis Pernod in 1805, this aniseed-based apéritif became the most celebrated spirit served on the café terraces of 19th-century Paris. It's traditionally diluted with a drop of ice-cold water, which makes it cloudy, to release its liquorice flavours, or try adding a splash to black coffee.
