Sweet Cos is a sweet, buttery lettuce with a crisp texture. It is thought that its name derives from Roman times, when the variety was discovered on the Greek Island of Kos in the Aegean Sea. As well as a more traditional use as a base for salads, Sweet Cos can also be halved, drizzled in olive oil and grilled or blended with peas and watercress for a light summer soup.
