A butterflied free range pork shoulder wrapped in a free range pork belly, and rubbed with olive oil infused with garlic, fennel seeds, sage, rosemary and thyme.

Preheat oven. Remove all packaging. Place in a deep roasting tray in centre of oven, cover the tray with foil and roast for 2 hours. Remove the foil and cook for further 20-30 minutes, basting frequently to colour. Cook thoroughly until the juices run clear and there is no pink meat. Rest for 15 minutes before carving. (Time 2 hours + 30 mins Oven: 180°C, Fan: 160°C, Gas: Gas Mark gas 4)
