Reared on selected farms in East Anglia, our traditional whole duck has a delicious moist game flavour and is large enough to feed a family of four.

Cook thoroughly until the juices run clear.
Preheat oven. Remove all packaging. Remove giblets from the body cavity, these can be used to prepare an authentic stock. Place the duck on a rack in a roasting tin, prick the skin all over with a fork and season with salt and pepper. Cook in the middle of the oven for 20 minutes per 500g plus 20 minutes extra. Baste every 40 minutes to ensure a golden brown skin. Once cooked leave to rest for 20 minutes before carving. (Time 20 mins per 500g + 20 minutes extra Oven: 220°C, Fan: 200°C, Gas: Gas Mark gas 7)
