Highland beef rump is specially sourced for Christmas. Highland cattle are typically smaller in size and slower to mature. The beef is produced on known farms from cattle bred from registered Highland bulls, producing beef which is tender and full of flavour.

TYPE TEMP RARE MEDIUM WELL DONE Electric 180�C 20 mins 25 mins 30 mins per kilo Fan 160�C 20 mins 25 mins 30 mins per kilo Gas Mark 4 20 mins 25 mins 30 mins per kilo + 20 mins + 25 mins + 30mins Preheat oven. Place in a roasting tray in the centre of oven. Ensure the surface of the meat is thoroughly cooked. Leave to rest for 10 minutes before carving. ( Oven: 180�C, Fan: 160�C, Gas: Gas Mark gas 4)
