A French inspired sauce made with red wine, button mushrooms and smoked bacon. Perfectly suited for boeuf bourguignon or a chicken casserole.

Chilled. Recipe: Serves 4 Ingredients: 500g chicken thigh Waitrose Slow Cook French Inspired Red Wine & Mushroom Sauce Method: 1. Pre heat the oven to Gas 4, 180°C, Fan 160°C 2. Lightly season the chicken thigh skin with salt & pepper. 3. Heat 1 tablespoon of vegetable oil in a heavy based frying pan and cook the chicken thigh over a medium to high heat until brown. 4. Transfer the chicken thigh into a casserole dish, fully coat with the sauce and place a lid on. Place in the centre of the oven and cook for 2 hours. 5. After 2 hours, remove from the oven and remove lid. Add a small amount of water to achieve your desired consistency, stir gently and return to the oven for a further 30 minutes. 6. Remove from the oven and allow to rest for 10-15 minutes before serving. 7. Serve with side dishes of your choice. (Time 2½ hours Oven: 180°C, Fan: 160°C, Gas: Gas Mark gas 4)
