Preheat oven. Place the chicken in its bag on a baking sheet in the centre of the oven. Do not open or pierce the bag before cooking. If you want the skin to be more crisp, remove the chicken from the oven 10 mins before the end of cooking time and open the bag by slitting down the front with a knife or scissors. Return the chicken to the oven for 10 mins. Remove and pierce the thickest part of the breast meat with a skewer to check that there is no pink meat and the juices run clear. If more cooking is required, return to the oven. Continue cooking for a further 15 mins and retest. Take care when opening the bag as steam will escape and there will be a lot of cooking juices. Allow to rest for 5-10 mins before carving. (Time 1 hr 35 mins Oven: 200�C, Fan: 180�C, Gas: Gas Mark gas 6)
