Remove all packaging. Preheat oven. Wrap meat in foil and place in a roasting tray in the center of the oven. Remove the foil for the last 30 minutes of cooking. Leave to rest in a warm place for 10 minutes before carving. (Time 2 hours 30 minutes Oven: 160�C, Fan: 140�C, Gas: Gas Mark gas 2 1/2)
