Preheat oven. Remove all packaging. Allow the lamb to rest for 10 minutes to enable the colour to return and any containment odour to disappear. Place in a roasting tray in the centre of the oven. Ensure the surface of the meat is thoroughly cooked. Rest for 10 minutes before carving. (Time Medium - 25 mins per 500g + 25 mins, Well done - 30 mins per 500g + 30 mins Oven: 180°C, Fan: 160°C, Gas: Gas Mark gas 4)
