Product Summary

Our 30 Day Dry Aged Easy Carve Sirloin comes from native breeds of cattle, whose meat is naturally marbled with fat, making it succulent, tender and full of flavour. To bring out the very best in the beef, it?s wrapped in muslin and hung on the bone in a carefully controlled, dry environment, making it even more tender, and developing a rich, almost buttery flavour. It?s then hand-prepared, with the meat carved from the bone, then tied back on, with fresh thyme, rosemary and bay, so the bone infuses the meat with flavour as it cooks. To carve, just snip the string and lift the meat away from the bone.

Oven Cook

From Chilled/Ambient
Preheat oven. Place in a roasting tin in centre of oven. Ensure the surface of the meat is thoroughly cooked. Leave to rest in a warm place for 10 mins before removing from the bone to carve. Discard herbs before serving. (Time well done 30 mins per 500g (1/2 kg) + 40 minutes Oven: 180°C, Fan: 160°C, Gas: Gas Mark gas 4)
