Preheat oven Place in a roasting tin in centre of oven. Ensure the surface of the meat is thoroughly cooked. Leave to rest in a warm place for 10 minutes before carving. Remove herbs before serving. Rare - 1hr 20mins Medium - 1hr 45mins Well done - 2hrs ( Oven: 200°C, Fan: 180°C, Gas: Gas Mark gas 6)
