Cook thoroughly until the juices run clear and there is no pink meat.
Preheat oven. Remove all packaging. Place meat into a small roasting tray, add 125ml red wine (or water) and tightly cover with foil. Place on a baking tray in centre of oven. Baste occasionally with the juices. Do not allow meat to dry out, add a little more water if needed. Remove foil 30 minutes before end of cooking. Cook thoroughly until the juices run clear and there is no pink meat. (Time 2 1/2 hours Oven: 200°C, Fan: 180°C, Gas: Gas Mark gas 6)
