British pork shoulder with coriander and chilli marinade
Pork shoulder (80%), olive oil, tomato paste, garlic, annatto, rapeseed oil, white wine vinegar, ginger, orange zest, cumin, lemon zest, salt, coriander leaf, Scotch bonnet chilli, red chilli, ground coriander, black pepper, lime zest, thyme, clove, pimento, preservative sulphur dioxide

Cook thoroughly until the juices run clear and there is no pink meat.
Preheat oven. Remove all packaging. Place meat into a small roasting tray, add 100ml orange juice and tightly cover with foil. Place on a baking tray in centre of oven. Baste occasionally with the juices. Do not allow meat to dry out, add a little water if needed. Remove foil 30 minutes before end of cooking. Rest for 2-3 minutes, then shred with forks or slice. Serve with tacos or tortilla wraps. Cook thoroughly until the juices run clear and there is no pink meat. (Time 2 1/2 hours Oven: 200�C, Fan: 180�C, Gas: Gas Mark gas 6)
