Spruce wood infused, complex floral flavours, golden runny centre. Vacherin is made in the small mountain town of Pontarlier, by the Badoz family who have be making cheese since 1830. It is a seasonal cheese only available from September to March. It is bound with a hoop of aromatic spruce bark which imparts a unique aroma and complex floral flavour to the golden runny centre.
