Prime British pork from pigs born outdoors and reared in airy, straw-bedded barns. Waitrose pigs are reared to produce high quality, succulent pork that is tender and full of flavour.

Cook thoroughly until the juices run clear and there is no pink meat.
Preheat oven. Remove all packaging. Remove butters and put aside. Heat 1 tbsp oil in a pan and cook on high to seal for 2-3 minutes. Transfer to roasting tray, add butters and place in centre of oven. Cook thoroughly until the juices run clear and there is no pink meat. Cover with foil and rest for 10 minutes. Carve with a sharp knife before serving. (Time 20 minutes Oven: 220�C, Fan: 200�C, Gas: Gas Mark gas 7)
