Spelt Risotto with courgette, garlic and thyme. A delicious blend of pearled spelt with carefully sourced vegetables and herbs. A gourmet meal in just 20 minutes! What is Spelt? Spelt is an ancient grain, a distant cousin of wheat, but with a unique gluten structure making it easier to digest. It has a delicious nutty taste and spelt flour is perfect in all recipes where wheat flour is used... However, it's also fantastic as a rice replacement, as in this spelt risotto mix. During cooking the grains plump up to around twice their size and take on the full flavours of the additional ingredients. It's thought that Spelt originated in the Middle East, and since then has been much prized for its health properties: it's a great source of protein, is packed full of wonderful nutrients and is low in saturated fat. Spelt is harvested with its tough outer husk intact, locking in all the goodness, and we only remove that when we come to clean the grain in our dedicated spelt mill.
