- Raisin & Cherry Chunks Ingredients 60g Whitworths Desiccated Coconut (40g for mixture, 20g for lining tray) 75g Plain Chocolate 30ml/2tbsp Golden Syrup 80g Butter (75g for mixture, 5g for greasing tin) 100g Whitworths Raisins 100g Whitworths Glace Cherries (chopped) 125g Rich Tea Biscuits (broken into small pieces) How to make 1. Spread 5g of butter evenly over side and base of a shallow 18cm (7") square cake tin. 2. Coat evenly with 20g of desiccated coconut. 3. Melt the chocolate, butter and golden syrup in a heat proof bowl over a pan of hot water. Stir well. 4. Add in the remaining ingredients and stir thoroughly until evenly covered. 5. Add and press mixture into prepared cake tin. 6. Chill for 2 hours, cut into squares and serve.
Store in a cool, dry place. Once opened, reseal, refrigerate and consume within 2 weeks.
