- Sultana&Ginger CheesecakeIngredients175g Digestive Biscuits, crushed50g Caster Sugar75g Unsalted Butter, melted350g Cottage Cheese2 Medium Eggs, lightly beaten125ml Soured Cream75g Whitworths Sultanas30g Whitworths Crystallised GingerHow to make1. Preheat oven to 180°C (Fan 160°C), Gas Mark 4.2. Mix the crushed biscuits and half of the sugar with the melted butter and press onto the sides and base of the flan tin.3. Bake in the centre of the preheated oven for 10 minutes, then set aside to cool in the tin.4. Beat the cottage cheese until softened, then add the eggs, soured cream and the remaining sugar and beat until smooth.5. Fold in the sultanas and the ginger and pour over the biscuit base.6. Return to the oven to bake for further 30-35 minutes, allow to cool fully before removing from the tin to serve.
Store in a cool, dry place. Once opened, reseal, refrigerate and consume within 2 weeks.
