Ivory Cheese which gradually speckles with Natural mould, emphatically goaty flavour which gets stronger.
Poitou is the historic centre of cheese production in France. A legacy from the Saracens, people of Arab descent, who when famously repelled at The Battle of Poitiers left behind their goats and their expertise for making goats cheese. The cheese was known as cheblis meaning 'goat' in Arabic, which became ?chabichou"" thereafter. AOC was granted in 1990.
