Preparation & Storage
- Dundee Cake Ingredients 200g Unsalted Butter, softened 200g Dark Brown Sugar 4 Medium Eggs 1 Lemon, grated zest & juice 200g Plain Flour 50g Whitworths Ground Almonds 500g Whitworths Mixed Fruit 150g Whitworths Glace Cherries, halved 100g Whitworths Whole Blanched Almonds How to make 1. Preheat the oven to 160°C (Fan 140°C), Gas Mark 3. 2. Grease and line a 20cm deep sided cake tin. 3. Cream the butter & sugar together, then gradually beat in eggs, lemon zest & juice. 4. Fold the flour, ground almonds, mixed fruit & cherries into the creamed mixture and spoon into the cake tin. 5. Arrange the whole almonds in circles on top of the cake mixture, starting in the centre. 6. Bake on the bottom shelf of the preheated oven for 2-2 1/2 hours or a skewer inserted into the centre of the cake comes out clean.
Store in a cool, dry place. Once opened, reseal, refrigerate and consume within 2 weeks.
