- Put a zing in your step with this fabulously light and zesty lemon cake. So grab your apron and mixing bowl and fire up your oven to 180°C (160°C for fan assisted ovens)/Gas Mark 4 - it's baking time! Preparation 10 mins. Baking time 35-40 mins. Serves 8. All you need is: 40ml vegetable oil (3 tbsp). 80ml water (5 1/2 tbsp). 2 medium free range eggs. A well-greased or preferably lined 1 lb loaf tin. 10ml water (2 tsp) for the glaze. Only 3 steps to cake heaven... 1. Mix the eggs, oil, water and cake mix gently together and whisk (by hand or electric mixer) for 2-3 minutes until smooth and creamy. 2. Pour the mixture evenly into your loaf tin. 3. Bake in the centre of the oven for 35-40 minutes or until a rounded knife inserted into the centre of the cake comes out clean, then cool on a wire rack. Finally, mix the glaze mix and water together until blended. Drizzle over the cake with flair- your Sunny Lemon Cake is ready to eat! ... delicious! Bake it yours.
