Produced in Lombardy to a recipe founded in the 19th century, the pork meat is mixed with regional ingredients such as Mezza Grana peppercorns, wine from the Parma region, garlic from the Piacenza region and sugar. This mix is then placed in a casing, hand tied with twine and left for a minimum of 90 days to mature to develop the flavour.
